National Fajita Day: The Best Queso Scenario
It is believed that the “fajita” was invented in 1930, as a quick meal for workers and their long hours in the sun. Mexican vaqueros in Texas first crafted the dish with skirt-steak, spices, pico de gallo, guacamole, and of course, tortillas.
In 1960, fajitas were popularized by Sonny Falcon, also known as the “Fajita King.” The following decade, “The Fajita King” and his kiosk in Austin, Texas, pushed fajitas into mainstream media.
Today, the dish is a staple and favorite.

All fajita options are served with lettuce, sour cream, guacamole, and tortillas. Besides chicken or beef, they also have seafood, (with shrimp and scallops), and vegetarian options. Pair with their classic margarita, for a delicious dinner.
La Tolteca
La Tolteca is a local chain restaurant that specializes in authentic Mexican cuisine. Located in Crofton, it is available for takeout and delivery.
All fajita options are served with Spanish rice, fried beans, guacamole, sour cream, and choice of tortilla. Besides chicken or beef, they have Texan fajitas, with beef, chicken, shrimp, tomatoes, onions, and bell peppers. They also have shrimp fajitas and Hawaiian fajitas, grilled chicken, shrimp, chorizo, pineapple, onions, and tomatoes. Best of all, it’s served in a pineapple!
Mi Casita
Mi Casita is an authentic Mexican restaurant in Gambrills. It is open for limited dine-in, carry-out, and delivery via DoorDash.
Cooked with the freshest ingredients, you’ll be impressed with their delectable fajitas. They have a seafood, chicken, beef, pork, and/or vegetarian option. All fajitas are served with tortillas, sour cream, guacamole, beans, and lettuce.
Rinconcito Mexicano
In Odenton, Rinconcito Mexicano prepares fresh Mexican cuisine with locally-sourced ingredients. They’re now open for limited dine-in, carry-out, and delivery via DoorDash. They also have outdoor seating.
They offer fajitas with a variety of meat options: chicken, beef, and/or seafood. You can also order vegetarian fajitas with grilled onions, tomatoes, bell peppers, mushrooms, squash, and zucchini. All fajitas are served with tortillas, beans, guacamole, and sour cream.
Mi Lindo Cancún Grill
Mi Lindo is bringing you Cancún cuisine, right in the heart of Annapolis. This family-owned favorite is available for carry-out.
They offer traditional fajitas, with chicken, beef, shrimp, or a mix. Mi Lindo also offers Fajita Loca, with bell peppers, onions, chicken, beef, chorizo, and salsa Ranchera. The Fajitas Molcajete is a staple, with melted Oaxaca cheese, onions, bell peppers, nopales, chicken, beef, and shrimp.
