On Tuesday, September 22nd at 6:00 p.m., Monarch will be partnering with Chef Chris Atwood, for Ravioli Night: Two Ways. From the safety of your luxurious apartment home, you can join Chef Atwood via Zoom to prepare and cook two kinds of raviolis: 3 Cheese and Spinach Ricotta. Fillings and pasta dough will be made from-scratch—it’s not im-pasta-ble!

Spaghett Excited for Chef Cris Atwood
Chef Chris Atwood is a graduate from the University of California, Berkeley, with a PhD in Italian. He is well-versed in authentic Italian cuisine and has co-published Italy for All Seasons, with Laura Massoni. Mamma Mia, The History of the Ravioli!
The earliest record of the ravioli is from Venice, dated back to the 14th century. It was coined “ravioli,” since the word comes from “riavvolgere,” Italian for wrap. The ravioli, however, was not served with tomato sauces until the 16th century. The traditional ravioli is square-shaped and made with fresh herbs, cheese, and eggs. The dish was originally meatless served every Friday, during the Christian observation of Lent.
